There’s really nothing not to love about slow cookers. Just think how nice it is to come home at the end of a long day to a lovely hearty meal, which took minimum prep. Not to mention that they are cheap to buy and run, healthy, convenient and require very little washing up (the lazy cook’s dream).

Slow Cooker Lamb Curry with Scotch Lamb, Aubergine and Butternut Squash
This slow cooker Lamb Curry is originally a casserole-based recipe, but you can easily adapt it for the slow cooker. Brown the meat in batches, and add the curry paste and the water with the last batch. Then simply combine all the ingredients in the slow cooker on low for around 6 hours. The ginger and cumin give the whole thing a lovely spicy kick.
