Pork Topside Steak with Sage Fried Potatoes and an Orange Dressing salad

Ingredients 

For the steaks:

4 Specially Selected Pork Topside Steaks

Oil for Frying

Pinch of Salt and Cracked Black Pepper for Seasoning

For the sage fried potatoes:

Bunch of sage leaves

300g peeled potatoes

Oil for frying

Pinch of Salt and Pepper for Seasoning

For the salad:

Mixed salad leaves

1 x orange – peeled sliced or segmented

For the orange dressing:

400ml Orange juice

30ml Olive Oil

2 tsp Lemon Juice

Cooking Method

Steak method

  • Heat a large saucepan and add a little oil, season the pork topside steaks with sea salt and black pepper and place in the pan, cook for approximately 3 minutes on each side then remove from the pan and allow to rest for 5 minutes before serving. Remember to cover and keep warm when resting.

Sage fried potatoes method

  • Dice the potatoes and boil until almost cooked then drain.

  • Heat the oil in a pan and fry the sage leaves in batches, remove with a slotted spoon and place on kitchen paper, they should be crispy.

  • When the potatoes are drained fry in the oil the sage was cooked in and cook until the potatoes are golden.

Salad with orange dressing method

  • Mix all the salad ingredients together, season and bind with a little of the reduced orange dressing.

  • Pour the orange juice into a hot pan and reduce until thick and syrupy, mix through the oil and lemon juice.

  • Note – The salad, orange dressing, crispy sage leaves and boiled potatoes can all be prepared in advance.
