    Preheat the oven to 180C (conventional oven) or 160C (fan oven).

    In a large, oven-safe frying pan, heat the olive oil over medium heat. Add the chopped onion and cook for 5 minutes until softened.

    Add the garlic, cumin, paprika, chilli powder, and oregano. Cook for 1 minute, stirring, until fragrant.

    Add the beef mince and cook for 5–6 minutes, breaking it up with a spoon, until browned all over.

    Stir in the tomato puree, chopped tomatoes, black beans, sweetcorn, rice, and chicken stock. Season with salt and pepper to taste.

    Bring to a gentle simmer, then cover with the lid and place in the oven. Bake for 25 minutes, until the rice is cooked and most of the liquid is absorbed.

    Remove from the oven, stir gently, and sprinkle over the grated cheese. Return to the oven, uncovered, for 5–7 minutes until melted and golden.

    Garnish with fresh coriander and a squeeze of lime juice.
