Scotch Beef Steak and Roasted Red Pepper Pasta Salad with Basil Salsa Verde

    Remove the steaks from the fridge 30 minutes before cooking to come up to room temperature. If barbecuing the steaks, prepare your bbq so it is nice and hot.

    Add all the ingredients for the basil salsa verde to a small food processor. Whizz until combined and season to taste. Alternatively, finely chop the basil, garlic, anchovies and capers and add to a bowl with the mustard and red wine vinegar. Slowly add the oil whisking with a fork until you have a drizzling consistency.

    Cook the pasta according to the packet instructions. Once cooked, drain, add to a large bowl and pour over three quarters of the salsa verde dressing while the pasta is still warm. Add the olives, red peppers, cherry tomatoes and rocket. Toss everything together so it is well coated in the dressing.

    Rub the steaks with the 1 tbsp olive oil so they are well coated. If cooking indoors, heat a griddle pan over a high heat. Whether cooking on the bbq or in a pan, fry the steaks for 3-4 minutes on each side for medium rare (based on a 2.5cm thick sirloin steak). Remove to a clean board, pour over the remainder of the basil salsa verde dressing and massage this into the meat. Cover with foil and leave to rest for 5 minutes.

    Slice the steaks and add to the pasta salad along with any resting juices. Toss everything together and serve on a large platter topped with the parmesan shavings.
