    Preheat the oven to 130°C fan/150°C. Heat a casserole dish over a high heat and add the oil. Fry the beef in batches until evenly browned on all sides. Set aside on a plate.

    Lower the heat in the pan and add the onion. Fry gently for 8-10 minutes until soft.

    Meanwhile put the drained raisins and 5 tbsps of their soaking liquid into a small food processor with the garlic, chipotle paste, tomato purée and peanut butter. Whizz to a paste.

    Once the onions are soft, return the meat back to the pan and add the oregano, cumin and cinnamon stick. Stir for a minute then add the paste, stirring for a couple more minutes until it smells fragrant. Add a splash of water to the empty processor and swirl it around to pick up any remnants of the paste and add this to the pot along with 450ml of stock.

    Bring to a boil, put a lid on and slow cook in the oven for 3 hours. Alternatively cook in a slow cooker for the same amount of time.

    After 3 hours, remove the lid and add the dark chocolate. Taste, adjusting the seasoning as necessary.

    Serve with rice of your choice, the charred corn salsa and wholemeal tortilla chips.
