    In a saucepan, in a little oil, fry your finely diced onion and garlic until fragrant and browning
  • 2
    In a bowl, add your lamb mince with all of the spice mix, onions, garlic and salt, combine all together well, using clean hands is best here
  • 3
    Weigh out equal mixture and start to mould and roll them around a skewer, squeezing gently, so it becomes a kofta shape
  • 4
    Pop on a tray, cover in cling film and refrigerate, overnight is best for maximum flavour but for 1-2 hours will also do
  • 5
    Cook in your airfryer, grill, fry or oven, until cooked
  • 6
    Sprinkle with fresh pomegranate and mint
