Method:

    Trim away the pineapple peel and chop the pineapple into wedges, removing the tough core as you go and any brown “eyes”.

    If cooking outside, make sure the bbq is very hot then grill the wedges for 3-4 minutes until slightly charred and blackened, turning occasionally. If cooking inside, dry fry the wedges in a large frying pan or griddle pan over a medium heat for around 4-5 minutes, until charred on all sides.

    Once cool, finely dice and add to a large bowl with the rest of the ingredients. Mix well then leave to soften at room temperature for at least 20 minutes before serving with any grilled cuts of Specially Selected Pork, Scotch Lamb or Scotch Beef of your choice.
