Air Fryer Meatloaf with Smoky Tomato Sauce

    Put the beef mince in a large bowl with half the chopped onion, egg, breadcrumbs, 1 tsp of tomato puree, garlic granules, 1 tbsp worcestershire sauce, ½ tsp salt and parsley. Mix well with your hands until combined and shape into a rectangular loaf shape.

    Place a sheet of greaseproof paper onto the basket of your air fryer and put the meatloaf on top. Air fry at 180°C for 25 minutes.

    Meanwhile, make the tomato sauce. Fry the other half of the onion in the olive oil for 7-8 minutes over a low heat in a small saucepan, stirring every so often until softened.

    Next add the chipotle paste and tomato puree. Stir for a couple of minutes before adding the can of chopped tomatoes and beef stock. Simmer for 10-15 minutes until reduced and slightly thickened before adding the red wine vinegar, sugar and seasoning to taste.

    For the glaze, add the remaining tsp of tomato puree, maple syrup, 1 tbsp worcestershire sauce, cheddar cheese and red wine vinegar to a small bowl. Mix together.

    Once the meatloaf has had 25 minutes spread over the glaze and air fry for a further 10 minutes until slightly crispy.

    Leave to rest for 5 minutes before slicing and serving with the tomato sauce, greens of your choice, and mash.
