Spiced Scotch Lamb Shakshuka

It's a brunch classic with a bit of a twist - this Spiced Scotch lamb Shakshuka should definitely be next on your hitlist.

    Heat the oil in a large skillet pan over a medium/high heat. Add the lamb mince and onion and fry for 7-8 minutes until the onion is softened and the lamb is starting to brown and caramelise.

    Lower the heat then add the garlic, cumin, paprika, mint and tomato puree. Stir for a couple of minutes then add the tomatoes with 200ml water, stirring well. Simmer gently for 7-8 minutes until the tomatoes have almost completely broken down and released all their liquid, adding a splash of water if necessary.

    Season to taste, lower the heat, then make four wells in the mixture. Crack an egg into each of the wells, put a lid on the pan and cook until the eggs are just beginning to set, but the yolks are still runny, about 6-8 minutes.

    When the eggs are cooked to your liking, crumble over the feta, sprinkle over the parsley and serve in the middle of the table with toasted sourdough or flatbreads on the side.
