Method:

    Heat the oil in a large sauté pan over a medium/high heat. Remove the skins from the sausages and crumble the sausage meat into the pan. Fry for 5-6 minutes until golden and caramelised, breaking up any large chunks as you go.

    Lower the heat in the pan, dd the leeks and fry for 5 minutes until softened. Add the garlic, gochujang, tomato puree and cherry tomatoes. Stir for a couple of minutes before pouring in the hot stock. Simmer while you cook the pasta according to packet instructions.

    Once the pasta is cooked and the sauce has thickened slightly, drain the cooked pasta (keeping the pasta water) and add to the sauce along with a ladleful of the pasta cooking water, the spinach, creme fraiche, honey and lemon juice. Stir well so the pasta is well coated in the sauce then taste and correct the seasoning. Add more pasta water if necessary.

    Serve with grated parmesan and chopped parsley if using.
