Speedy Scotch Lamb Shawarma Flatbreads

Ingredients

• 6 Scotch Lamb Leg Steaks
• 1 tbsp olive oil
• 2 garlic cloves, crushed
• 2 lemons
• 1 tbsp cumin
• 1 ½ tsp coriander
• 1 tsp fennel seeds
• 1 tsp ground allspice
• 1 tsp ground turmeric
• ¼ tsp ground cinnamon
• ¼ tsp ground ginger
• For the salad:
• ½ small red cabbage, finely shredded
• 1 small red onion, finely sliced
• 1 small cucumber, deseeded and finely sliced
• 200g cherry tomatoes, halved
• 2 little gem lettuce, roughly chopped
• Handful mint, finely chopped
• 1 tsp sumac (optional)
• 30g feta, crumbled
• 4 flatbreads
• For the tahini dressing:
• 25g tahini
• 1 lemon, juiced
• 75g greek yoghurt
