Cooking Method

Method:

  • 1
Prepare the ricotta sauce base by adding the ricotta to a bowl and mix with the crushed garlic, lemon zest, a generous pinch of salt and plenty of freshly ground black pepper.
  • 2
Preheat the oven to 220°C (200°C fan) / Gas Mark 7, or as hot as your pizza base instructions recommend. Place the pizza base on a baking tray or, ideally, a preheated pizza stone. Spread the ricotta mixture evenly over the base, leaving a small border around the edge. Dot over the Cambozola and halved mozzarella balls, then scatter over the red onion.
  • 3
Bake for 10-12 minutes, or until the base is crisp and golden and the cheese is bubbling and lightly browned.
  • 4
Add the pigs in blankets, dollops of cranberry or caramelised red onion chutney, sage leaves, the sprouts (if using). Drizzle with a little olive oil and return to the oven for the final 3 minutes of cooking.
  • 5
Remove the pizza from the oven and leave to stand for 1 to 2 minutes. Finish with a final grind of black pepper before serving.
