Scotch Steak and Eggs Brunch Plate

Steak and Eggs is a brunch trend that is going away any time soon. So if you're having it, might as well make it Scotch Beef!

    Take the steaks out of the fridge 30 mins before cooking to come to room temperature.

    Cook the hash browns according to the packet instructions.

    Place the tomatoes on a foil lined baking tray, drizzle with the olive oil and balsamic, season with a little sea salt flakes and freshly ground black pepper, then roast in a hot oven for 5-6 minutes until slightly blistered but still holding their shape, then set aside.

    Meanwhile, pat both steaks dry with kitchen paper, then drizzle with oil and massage into the meat. Heat a nonstick frying pan over a high heat then fry the steaks on each side for 1.5-2 minutes, depending on the thickness. Season generously with sea salt flakes and freshly ground black pepper, then add the butter for the last 30 seconds of cooking, basting the steaks in the melted butter. Place on a board, loosely cover with foil and leave to rest while you cook the mushrooms.

    Return the pan you cooked the steaks in to a medium heat then add the mushrooms, thyme sprigs and an extra knob of butter if desired. Fry for 4-5 minutes until golden brown before adding the spinach and garlic for the final minute or so of cooking. Take the pan off the heat and keep stirring until the spinach has just wilted. Season to taste.

    Poach the eggs to your liking, then slice up the steaks and serve with the hash browns, roasted tomatoes, poached eggs and mushrooms and spinach on the side.
