Sticky Scotch Beef Brisket Bao Buns

    Preheat the oven to 130°C fan/150°C. Heat the oil in a large pot over a high heat. Add the chunks of brisket and fry on each side for 2-3 minutes until evenly browned all over. You may need to do this in batches depending on the size of your pot.

    Once the meat is evenly browned, lower the heat slightly and add the white parts of the spring onions, garlic, ginger and five spice. Stir for a couple of minutes before adding the oyster sauce, brown sugar, rice vinegar and beef stock. Stir well.

    Bring to the boil, place a tight fitting lid on the pot, and slow cook in the oven for 2 hours or until the meat is tender and falling part. Alternatively, place in the slow cooker for the same amount of time.

    After 2 hours, remove the lid to reduce some of the liquid for the final 30 minutes of cooking. Meanwhile, make the pickled vegetables by mixing everything in a bowl and leaving at room temperature (this can also be done in advance and kept in the fridge until ready to serve). Correct the seasoning to taste.

    Shred the meat using two forks and if there is still too much liquid, mix 1 tsp cornflour in a small bowl with 1 tbsp cold water until smooth. Add this to the beef and simmer for a few minutes on the hob until the sauce has thickened and become shiny.

    Heat the bao buns according to the packet instructions then assemble your bao buns with the sliced cucumber, spring onion shreds, spoonfuls of sticky beef and the pickled garnishes on top.
