Scotch Beef Steak and Chimichurri with Smashed Potato Salad

We all love a good Scotch beef steak - but have you thought of trying it with this tasty potato salad and chimichurri sauce? It's a belter!

Method:

    Preheat the oven to 180°C fan/200°C. Bring a large saucepan of salted water to the boil and cook the potatoes for 15 minutes. Drain and leave to steam in the colander for 10 minutes.

    Separate the potatoes onto a large lined baking sheet so they are roughly 5cm apart and use the bottom of a jar or spatula to press the potatoes down so they are roughly 1-2cm flat. Drizzle over the olive oil, sprinkle over a little sea salt flakes and black pepper and roast for 20 minutes on one side. After 20 minutes, turn the potatoes over and roast for a further 15-20 minutes until golden and crispy on both sides. Set aside to cool. (You could also air fry the potatoes at 190°C for 30-35 minutes until golden brown and crispy).

    While the potatoes are roasting, make the potato salad dressing by mixing all the ingredients together in a medium sized bowl. Adjust the seasoning to taste.

    Add all the ingredients for the chimichurri to a small bowl and whisk together. Adjust the seasoning to taste.

    Remove the steaks from the fridge 30 minutes before cooking. If barbecuing the steaks, prepare your bbq so it is up to temperature. Pat them dry before drizzling over the oil, season well, then massage the oil and seasoning into the meat. If cooking indoors, heat a griddle pan or frying pan over a high heat. Whether cooking on the bbq or in a pan, fry the steaks for 1 ½ - 2 minutes on each side for pink meat (depending on the thickness). Remove to a plate and loosely cover with foil. Leave to rest for at least 5 minutes before slicing.

    Once the potatoes are cool, add them to the salad dressing bowl and mix everything together. It’s ok if they break up a little bit, you just want the potatoes lightly coated in the dressing.

    Serve the sliced steak with a drizzle of chimichurri, the smashed potato salad and any vegetables of choice on the side.
