    Heat the olive oil in a large casserole pot over medium–high heat. Add the pork and brown on all sides for 5–6 minutes. Remove and set aside.

    In the same pot, add the onion and red pepper and cook for 4–5 minutes until softened. Stir in the garlic and tomato puree and cook for 1 minute until fragrant. Add the wine and simmer until it’s reduced by 1/3.

    Return the pork to the pot. Add the smoked paprika, sweet paprika, oregano, roasted red peppers, chopped tomatoes, stock, and bay leaf. Stir well.

    Bring to a gentle boil, reduce to a low simmer, cover with a lid, and cook for 60 minutes, stirring occasionally, until the pork is tender.

    Stir in the butter beans and simmer uncovered for 10 minutes to thicken. Season with salt and black pepper.

    Remove the bay leaf and serve topped with fresh parsley if using.
