Roast Beef, Seared Tomato and Basil Sandwich

    Heat the oil in a large non-stick frying pan and cook the onion for 2-3 minutes or until just beginning to soften. Drain and set aside.

    Add the tomato slices to the hot oil in a single layer cut side down. Increase the heat and cook the tomatoes without disturbing until soft and nicely browned – almost caramelising. Turn off the heat.

    Drizzle some olive oil over the bread slices.
  • 4
    Scatter the rocket leaves and half the basil leaves over 2 slices, top with the sliced beef, more basil leaves, the warm onions and tomato slices.

    Grind on some black pepper. Enjoy!
