Cooking Method

For the Steaks:

    Rub the Harissa paste all over the steaks and leave to marinate, preferably overnight but for at least 30 minutes. If Harissa is not available, blitz 3 red chillies with a clove of garlic, splash of rapeseed oil and a squeeze of lemon juice.

    Heat a heavy based pan and add the oil

    Fry the steaks for 3-4 minutes on each side (for medium rare) then remove from the pan and allow to rest. For rare, 2.5 minutes each side or well done 6 minutes each side.
