    Preheat the oven to 180°C fan/200°C. Add ½ tbsp olive oil, the sausages, garlic, squash and red onions to a large baking tray. Toss well and roast for 15 minutes.

    Give the pan a shake after 15 minutes, turn the sausages over and add the apple slices. Return to the oven for a further 15 minutes.

    Meanwhile, mix the remaining olive oil, rosemary, honey, mustard and vinegar in a small bowl.

    After the traybake has had 30 minutes, fish out the garlic cloves and squeeze the roasted garlic flesh into the dressing. Mix well and pour over the vegetables and sausages, making sure everything is well coated in the dressing, then return to the oven for a further 10 minutes, or until the sausages are evenly browned and the vegetables are soft
